Tacos are always a win — but tonight, we’re elevating them with fresh flavors, fun toppings, and a crunchy winter slaw that makes this dinner feel festive and bright. In this Big Bites class, young chefs learn how to sauté, season, chop, and build their own taco creations with confidence. A perfect December dinner the whole family will love!

What We’re Making

A complete taco spread featuring your choice of seasoned meat or black beans, fresh toppings, and a zesty winter slaw that adds the perfect pop of crunch and color.

Bold flavors + hands-on cooking = a Big Bites favorite!

Ingredients

Protein (choose one):

  • 1 lb ground turkey, beef, chicken — or

  • 1 can black beans (drained & rinsed)

Seasoning:

  • Taco seasoning packet or

  • Homemade: chili powder, cumin, garlic powder, paprika, salt

Toppings:

  • Tortillas (flour or corn)

  • Shredded lettuce

  • Shredded cheese

  • Diced tomato

  • Sour cream or Greek yogurt

  • Salsa or pico de gallo

  • Lime wedges

Winter Slaw:

  • 1–2 cups shredded cabbage or coleslaw mix

  • 1 tablespoon olive oil

  • Juice of ½ lime

  • Pinch of salt

  • Optional: cilantro, shredded carrot

Tools Needed

  • Nonstick pan or skillet

  • Spatula

  • Cutting board

  • Knife

  • Mixing bowl

  • Small bowls for toppings

  • Spoons/forks for serving

Step-by-Step Instructions

1. Prep Your Toppings

Wash and slice your veggies: tomatoes, lettuce, lime wedges, and any optional add-ons.
Skill focus: safe knife handling + organizing a “mise en place” station.

2.  Make the Winter Slaw

In a small bowl, combine:

  • Shredded cabbage

  • Olive oil

  • Lime juice

  • Pinch of salt

Mix well and set aside to marinate.
Tip: Letting it sit helps the flavors blend and softens the crunch slightly.

3. Cook Your Protein

Heat a pan over medium. Add ground meat and cook until browned, breaking it into small crumbles.
If using beans, warm them with a splash of water.

Sprinkle in the taco seasoning and stir until coated.
Skill focus: browning, seasoning, and safe stovetop cooking.

4. Warm the Tortillas

Warm tortillas in a clean pan for 15–20 seconds per side until soft and pliable.
You can also wrap them in foil and heat in a low oven.

5. Build Your Tacos

Set everything out buffet-style and let each chef build their perfect taco:
Protein → Slaw → Toppings → Lime squeeze
Encourage kids to try new combos — sweet, crunchy, creamy, spicy.
