Ingredients
Produce:
-
1 large butternut squash (peeled + cubed, or pre-cut)
-
1 onion (yellow or sweet), diced
-
2–3 garlic cloves
Pantry:
-
2–3 tablespoons olive oil
-
4 cups vegetable or chicken broth
-
Salt + pepper
-
Optional spices: thyme, nutmeg, paprika
Finish:
-
¼–½ cup heavy cream or coconut milk
-
Optional toppings: pumpkin seeds, croutons, a drizzle of cream, fresh herbs
Tools Needed
-
Large pot or Dutch oven
-
Sheet pan (for roasting)
-
Knife & cutting board
-
Blender or immersion blender
-
Measuring cups/spoons
Step-by-Step Instructions
1. Roast the Squash
Preheat oven to 400°F. Spread cubed squash on a lined baking sheet.
Drizzle with olive oil, salt, and pepper.
Roast for 25–30 minutes, until soft and caramelized.
Why this matters: roasting brings out sweetness and deep flavor.
2. Sauté the Aromatics
In a large pot, heat 1–2 tablespoons of olive oil.
Add diced onion and sauté until soft and golden.
Add garlic and cook for 1 more minute.
Flavor building = the soul of any good soup.
3. Add the Squash + Broth
Transfer roasted squash to the pot.
Pour in 4 cups broth.
Add thyme or spices if using.
Bring to a gentle simmer for 10 minutes.
4. Blend Until Silky Smooth
Use an immersion blender for easy cleanup, or carefully blend in batches.
Blend until luscious and creamy.
Texture tip: Add more broth if you prefer a thinner soup.
5. Swirl in the Cream
Stir in heavy cream or coconut milk.
Taste and adjust seasoning — more salt, a squeeze of lemon, or a pinch of paprika works beautifully.
6. Garnish + Serve
Pour into bowls and finish with:
-
Toasted pumpkin seeds
-
Chopped herbs
-
A drizzle of cream
-
Crunchy croutons
