In this Mama Bites class, we’re making a silky, cozy butternut squash soup perfect for pregnancy, postpartum healing, or just a busy weeknight when you need something soothing and simple.

This recipe is nutrient-dense, freezer-friendly, and totally customizable.

What We’re Making

A creamy, comforting, herb-infused soup made with roasted butternut squash, caramelized onions, warm spices, and a swirl of cream or coconut milk. Balanced, nourishing, and perfect for the whole family.

Ingredients

Produce:

  • 1 large butternut squash (peeled + cubed, or pre-cut)

  • 1 onion (yellow or sweet), diced

  • 2–3 garlic cloves

Pantry:

  • 2–3 tablespoons olive oil

  • 4 cups vegetable or chicken broth

  • Salt + pepper

  • Optional spices: thyme, nutmeg, paprika

Finish:

  • ¼–½ cup heavy cream or coconut milk

  • Optional toppings: pumpkin seeds, croutons, a drizzle of cream, fresh herbs

Tools Needed

  • Large pot or Dutch oven

  • Sheet pan (for roasting)

  • Knife & cutting board

  • Blender or immersion blender

  • Measuring cups/spoons

Step-by-Step Instructions

1. Roast the Squash

Preheat oven to 400°F. Spread cubed squash on a lined baking sheet.
Drizzle with olive oil, salt, and pepper.
Roast for 25–30 minutes, until soft and caramelized.

2. Sauté the Aromatics

In a large pot, heat 1–2 tablespoons of olive oil.
Add diced onion and sauté until soft and golden.

6. Garnish + Serve

Pour into bowls and finish with:
